6. Bhurji Paneer Pav

“Paneer Bhurji” can be eaten with “Pav – Bread” or with Indian flatbreads like “Roti” or “Paratha”.

First, you need to crumble the paneer (1 cup).
Then in a large pot, heat some oil and sauté a tablespoon of cumin seeds till they turn aromatic.
Then add one medium-sized finely chopped onion, few chopped green chillies and ginger-garlic paste, as per your taste.
When the onions turn slightly golden brown add one medium-sized finely chopped tomato and sauté till the mixture turns soft and mushy.
Now add the spices – ¼ tsp turmeric, ½ tsp red chilli powder, ½ tsp garam masala powder (optional) and salt as per your taste.
Let the mixture cook along with the spices on low flame for a minute, and then add 1 cup of crumbled paneer/ cottage cheese and mix well.
Mix the ingredients well for 3 to 4 minutes.
“Paneer Bhurji” is ready to be served with “Pav”.
You can even toast the “pav/ bread” in butter to add the “crunch”.
7. Eggless Wheat Flour Pancakes
I am a vegetarian and so “Eggless Wheat Flour Pancakes” is a good option for me as well as for all the vegetarians.
As this eggless pancake, does not contain “Maida” or “all-purpose flour”, but is made from “Wheat Flour”, these pancakes are healthy. nutritious and best for breakfast.
“Eggless Wheat Flour Pancakes” are made with whole wheat flour, jaggery powder (you can use sugar) and milk.
For preparing “Eggless Wheat Flour Pancakes”: –
First, boil 1 cup milk and let it cool.
Add 2 tablespoons of butter to the milk and mix well.
Then add 2 tablespoons of Jaggery powder or sugar to this milk- butter mixture and whisk well.
In another bowl, we will prepare the dry mixture.
To this bowl add I cup of wheat flour add 1/2 teaspoon of baking powder, 1/4 teaspoon of baking soda, 1/2 teaspoon of cinnamon powder, 1/2 teaspoon salt and 1 teaspoon vanilla extract and mix these dry ingredients well.
Add the milk mixture into the dry ingredients mixture and mix well to make a batter.
The batter should be a thick and flowy consistency. You can add some warm milk to adjust the batter’s consistency.
Pour 1/4 cup of batter on the heated frying pan or griddle and spread some butter.
When the pancake has turned golden brown from the base, flip and cook from the other side too.
When the pancake turns golden brown from both sides it is ready to be served.
Serve the “Eggless Wheat Flour Pancake” hot or warm with chocolate syrup or honey.
